Product description

Liquid Nitrogen (LN2) has a variety of uses. The widest use of LN2 is of course cryogenic storage; storage of anything you want to keep cold. However, there are other uses for LN2, such as Cryofrying. Cryofrying is a term used in Modernist Cuisine that refers to lightly cook a meat to brown on both sides, flash freezing the meat in Liquid Nitrogen, and then deep frying the meat until done. Using this technique will cook your meat to a perfect medium rare. LN2 is also used in the making of ice cream.

Whatever the use for LN2, you will need a container for storing your Liquid Nitrogen.

Caution:

1)For the first use of liquid nitrogen dewar, full fill it with LN2 and let it stand for approximately 24 hours. LN2 evaporates very quickly for the first use. After approximately 24 hours, refill the dewar then put your samples into the dewar.

2)Boiling and splashing always occur when filling a warm container with cryogenic liquid or when inserting objects into the liquid.

3)These tanks are shipped empty. Customers will need to obtain their own Liquid Nitrogen.

Notes:

Holding time is tested in a static status without canisters or samples inside. Moving tanks, opening tanks, or adding samples will fasten the evaporation of liquid nitrogen.

Actual holding time can vary depending on

1)If there are canisters inside

2)Size, temperature and heat capacity of the sample

3)Temperature and humidity of the surrounding

4)Any movement (during changing samples or while transporting)
